WFMW - 5 Ingrediant or Less Mexican

Well... I had another post all ready to go before I realized it was "5 Ingredient or Less" day at Works For Me Wednesday. So here one great recipe that makes two great dishes that my family loves to make from time to time. Its quick and easy and falls into the 5 ingredient or less category.


Chicken Enchilada/Quesadilla Mix
1 can cr. chicken soup
1 can green enchilada sauce
1 can chicken (or 1-2 cups diced chicken)
2-3 cups shredded cheese
6-10 corn or flour tortillas (large are better for quesadillas - small work well for enchiladas)

Mix the first three ingredients in a medium size bowl. You can do two things with this mix.
One - you can layer it with the tortillas and cheese to make enchiladas. You can roll them up or you can just layer it like you would lasagna. You bake around 350degrees for 30min - or until the cheese is bubbly.
OR
You can layer a couple tablespoons of the mix with a handful of cheese between two tortillas and toast it on a frying pan (like making grilled cheese). Its great! Dip in salsa or sour cream! Yum! Keeps pretty well in the fridge for a few days.
